Winemaking and Drinking
Wynns Coonawarra Estate, established in 1951 by Samuel and David Wynn, has long been synonymous with premium Australian wines, particularly those from the Coonawarra region. The Gables Cabernet Sauvignon 2021 pays homage to the winery's heritage-listed gabled winery, a symbol of exceptional quality for over half a century.
Origins and Winemaking
The Gables is crafted from select parcels of Cabernet Sauvignon grapes grown in Coonawarra's renowned terra rossa soils. The 2021 vintage benefited from favorable growing conditions, yielding fruit of outstanding quality. Under the guidance of winemaker Sue Hodder, the grapes underwent meticulous vinification to preserve their varietal character. The wine was matured in a combination of new and seasoned French oak barrels, enhancing its complexity and structure.
Tasting Notes
On the nose, The Gables 2021 exudes dark cherry aromas intertwined with fragrant dusty spices, complemented by hints of sage and thyme. The palate reveals classic flavors of cedar, tobacco, and blackberry, supported by soft yet vibrant acidity and superfine tannins. This elegant Cabernet offers a seamless and persistent finish, making it a versatile companion to dishes such as smoky charcuterie, aged cheeses, grilled meats, and spicy prawns.
